I'm Outa Stuff-Crockpot

Yield: 10 Servings

1 c Chopped leeks (bulb +greens)
1 c Chopped canned ham
3 sm Carrots, chopped
1/3 c Butter/lima dry beans
1/3 c Dry black eyed peas
1/2 c Dry red beans
1 ea Small hard hot sausage (5oz)
1/2 tb Salt
Water

This is as simple as it gets. Wash the leeks and carrots then cut them into small rounds. add them and the dry beans (may vary the amounts of each as needed based on what it onhand). Open a canned ham (inexpensive water added is fine) and chop that to slices of about 1/2 inch thick or less, then slice to 1.5 x 1.5 inch squares. Add about 5 oz of a hot *firm* precooked sausage if handy (omit if not firm type). Pepperoni may make a suitable substitute. Add salt to taste.

Put all this in the crockpot then add water to 2 inches below the top. Cook on low. Ready when the beans are done. Keeps really well if left on for 2 days.
